While travelling Europe, Nipper and Sylvia Thompson ended up stuck at a Swiss Dairy in the Wandel Alps near Meiringin. There they learned the art of organic cheese making. They decided to put it into practice in Limpopo’s beautiful Magoebaskloof in 1986. They make cheese, by hand, in the traditional Swiss way with live cultures, over an open fire, using a purpose-made large copper cauldron. There are no machines involved.
The farm is “off-the-grid” with solar for electricity, birds do a majority of pest control and micro-organisms, which play a role under the soil and in the cheese-making process, are highly valued and encouraged to flourish.
